Choose the right barrel finish for your aging project

At Red Head Barrels, our standard in-stock barrels come with a #3 char, which is our most popular option for aging spirits. If you want something different, we also offer custom toast and char levels so you can match the barrel to your specific flavor goals.

Different toast and char levels affect how the oak interacts with your spirit. They can influence color, smoothness, filtration, and the types of flavors the barrel adds over time.

Below is a guide to our available toast and char levels and what each one is best suited for.

#0 – Light Toast

A Light Toast barrel is heated with flame, but the interior is not carbonized. The inside of the barrel remains golden in color with a smooth wood surface.

This level is ideal when you want a gentle oak influence without strong smoke or heavy char notes. It allows the natural wood sugars to develop subtle flavor while keeping the spirit cleaner and lighter in character.

Best for:

  • Spirits where you want mild oak influence
  • Lighter flavor profiles
  • Customers who want less smoke and char character

#1 – Heavy Toast / Light Char

A #1 Heavy Toast / Light Char begins to develop a light carbon layer on the inside of the barrel. The surface darkens, but the wood grain is still clearly visible.

This level gives you a little more barrel impact than a light toast, while still staying on the lighter end of the spectrum. It can help provide gentle filtration and add mild color and flavor.

Best for:

  • Lighter spirits
  • Finishing projects
  • Customers looking for a balance between toast and char

#2 – Char

A #2 Char creates a solid black carbon layer across the interior of the barrel. This process opens the pores of the wood and allows the barrel to help filter the spirit while adding more noticeable color and flavor.

This is a good option when you want more barrel character, but not as much intensity as a deeper char.

Best for:

  • Spirits that need more color and oak character
  • Aging projects where moderate filtration is desired
  • Customers wanting more flavor impact without going too heavy

#3 – Char

A #3 Char has a deeper and thicker carbon layer than a #2. This creates stronger filtration and produces more pronounced barrel influence over time.

This level is known for contributing deeper oak character along with notes often associated with caramel, smoke, and richness in the finished spirit.

This is our standard in-stock inventory char level.

Best for:

  • Whiskey, bourbon, rum, and other full-bodied spirits
  • Customers who want a strong traditional barrel-aging profile
  • Most general spirit aging applications

#4 – Alligator Char

A #4 Alligator Char is the heaviest char we offer. At this level, the interior surface cracks into a texture that resembles alligator skin, which is where the name comes from.

This creates the most intense carbon layer and the boldest barrel impact. It is designed for customers who want deep, rich barrel influence and a strong char profile.

Best for:

  • Bold aging projects
  • Full-bodied spirits
  • Customers looking for the strongest char impact available

Which toast or char level should you choose?

If you are unsure which level is best, here is a simple guide:

  • Light Toast (#0): subtle oak character
  • #1 Heavy Toast / Light Char: mild barrel influence
  • #2 Char: moderate color, flavor, and filtration
  • #3 Char: strong traditional aging profile
  • #4 Alligator Char: deepest and boldest char impact

For most customers, #3 Char is the best all-around choice, which is why we normally keep it in stock.

How to Order a Custom Toasted or Charred Barrel

When you’re ready to order a custom barrel, here is how to request it:

  1. Add the barrel to your cart
  2. During checkout, look for the field: “Special Order Barrel ($15.00) (optional)”
  3. In that field, type the number corresponding to the level you want: e.g. #0 or #4, etc

That note flags it for our production run, and we will get it built and shipped as soon as it is ready. Allow 4-6 weeks for production.
